have another look at the diaphragms Mick. Might not be seated properly or a tiny hole ?
Vacumn pipe on ok ? no leaks ?
maybe turn the idle screw in till it ticks over enough not to stall ?

The main jets won't have much of an effect on tickover.
There's no standard setting for the idle screw. Just turn it in until you reach the revs you want.
You didn't tell us whether you used the choke?

Screw the idle screw in until it idles............at around 800-1000 rpm
If it still wont idle properly the carbs will probably need balancing...... if youve had them all apart
It does not take much to knock a set of carbs out of balance!
I have a set of vacuum gauges........... if you need to borrow them!

if the carbs were in pieces you need to sync them.... do a bench sync on them first to get in te ballpark and then they'll need doing again when on the bike to set them up properly....
std jetting with a harris will need rejetting anyway as it's less restrictive than std pipes... personally, i'd be thinking one size larger (to start) and raise the needles a notch. but in all honesty, with a std airbox you'll have em on and off a fair few times before it's setup nicely.... i think that's why most go for individual filters/dynojet kit or std airbox with std pipes....

It was me and my personal experience that single pods don't work too good on the stock Katana cv carbs - others may be content with it though.

mine are fine.... 36 and not 34's though but ape pods with efe 36's are certainly not an issue as far as i can tell
