Funnily enough to add to the Reading to Much Into It, I saw this Katana as a for sale in a Facebook group with the same pictures and that was being sold by a Hughes Retro Superbikes which have an admin office in Glasgow but looking at their sold bikes you could see the same scenery - https://hughesretrosuperbikes.com/. Though they seemed to be original classics rather than Retro, the Katana is still listed in the current stock.
Anyway the home page picture of the Moto Martin seemed to ring a bell with me from something else I had seen. Zooming in you can see on the window is Legend Motors Lille - https://www.bikeexif.com/legend-motors-lille, I remember reading about them somewhere else, I could remember the shop front.
