If your bike is originally UK from new or an import that was dated with the foreign country registration document with the full date on it then on the V5 it will have an actual dd/mm/yyyy registration date. If that is the case then the MOT exemption starts from that date but the tax at £0 starts from the April the following year.
E.g. say you currently have a bike registered on 23/02/1982 and you lay it up over the winter on SORN and no MOT. Come April 1st you can get it Taxed without an MOT by filling in the V112 using option "r" when you go to the Post Office to tax it.
Note the V112 form does state to be valid, the vehicle "has not been substantially changed in the last 30 years" then goes on to list the components but it says "other than for motorcycles" and there has been discussion on that - it's a bit vague, I'd just go with it if I had a modified bike, and plead ignorance (easy in my case!)
If you have an import that has been registered with a dating certificate then all you have is a year of manufacture ( current V5 on the front says "Declared Manufactured yyyy", older ones may differ ). This means that the MOT exemption will not start until 1st Jan the year following the 40th year and tax exemption the April of that year.
